Sauteed Shrimp with Mango

| Ingredients: • Large cleaned Shrimp 1# • 1 Jar of Mango or Mango Tango Salsa • 1 cup cooked rice of choice • add any steamed vegetables you choose to rice (optional) In a small frying pan add 1 tbs olive oil and saute shrimp until done. Serves 2. |

For a taste of the Tropics use our Channel Islands Pineapple Salsa as part of the marinade.
1 Pork Tenderloin (approx 1 lb) Combine above ingredients in a large zip bag, mixing well and massaging the marinade into the tenderloin. Place bag in a bowl or container (in case of any leaks) and refrigerate for an hour. Preheat oven to 350 degrees F (175 degrees C) or if grilling preheat the grill. Roast or grill for 30 to 45 minutes, or until a meat thermometer reads a range of 160° to 170°. |
